Quello che oggi rappresentiamo come tradizione, per le famiglie degli antichi Walser e fino ai primi del 1900 circa, era una consuetudine che si ripeteva ogni anno in autunno dopo la festivit\u00e0 dei santi e la commemorazione dei defunti. Veniva acceso il fuoco nei forni frazionali (bach h\u00f6fe) e quando l\u2019uomo addetto (h\u00f6fe mandii) valutava che la temperatura per cuocere fosse ormai prossima, dava il via alle donne (bacherlini) che mescolando farina bigia, acqua e lievito, incominciavano ad impastare. Vi era usanza che a rotazione, un anno per uno, venisse messa a disposizione la sala (stubu) di una delle abitazioni vicine al forno mantenuta ben calda dal fornetto tradizionale (h\u00f6fe) in pietra ollare per permettere la lievitazione dell\u2019impasto che veniva lavorato in una grossa marna di legno poi, in religioso silenzio, suddiviso in grosse forme (boviaga) e lasciato riposare su un caratteristico letto con ruote (roll bed) coperto da un lenzuolo fresco di bucato e da una coperta di lana. Quando sulla superficie delle boviaga si formavano delle spaccature, le donne lo suddividevano in pezzi di circa 1 kg l\u2019uno continuando a lavorarlo finch\u00e9 avesse raggiunto una bella forma. Le pagnotte venivano poi trasferite su assi (tescha) e portate al forno dagli uomini. Venivano anche fatti dei pani arabescati e con forme allusive (per lo pi\u00f9 le madrine li preparavano per i figliocci) rotondeggianti (m\u00eclciuru) se destinati a una femmina e allungati (tz\u00ecbal) se destinati a un maschio. Il pane, una volta cotto e fatto raffreddare, veniva portato con il gerlo (ch\u00f9orb) nei solai arieggiati (bruot spicherli) e messo su rastrelliere (bruot lettru) dove si sarebbe seccato e conservato fino alla panificazione successiva. Le persone pi\u00f9 anziane e carismatiche della frazione stabilivano l\u2019ordine con il quale ogni famiglia procedeva alla preparazione e cottura del proprio raccolto. Della prima infornata, un pane veniva donato al prete, uno ai padroni della stubu e uno ai pi\u00f9 poveri del paese o anticipato a chi aveva gi\u00e0 finito le scorte, con l\u2019impegno di restituirlo appena lo avessero cotto a loro volta. Anche i bambini avevano un compito che consisteva nell\u2019andare giornalmente in solaio a girare i pani perch\u00e9 potessero seccare senza ammuffire. Tale compito doveva essere svolto fischiettando per evitare che potessero mangiarne.<\/p>\n
